30 on $30 Days 15 & 16

I'm halfway there y'all! The experience thus far has been eye opening indeed. Couple surprising things have come to light during this journey so far:

I don't have to eat as much. Didn't realize I was over eating at each meal, but not needing to consume meat at every meal is OK too. The smaller portions have trained my mind to be content with the portions. Even with smaller portions, my body feels satiated.  Our mind is a powerful thing, and if trained with a little will power, it can really pass over some habitual obstacles.

I feel better. Clarity. Energy. These are things I didn't even know I lacked. Sleeping has never been an issue for me. Once my head hits that pillow, I'm out for a good 8-9 hours. However, I still woke up so groggy, tired, and takes a good 2 hours or so for my mind and body to feel awake. Now? I wake up with so much energy, ready for the day! I might attribute this to not eating meat - since your body uses up so much energy to break it down. I might attribute it to not drinking caffeine - my body is no longer dependent on a kick start. I might even attribute this to no processed sugar, or sugar in general - I hear that sugar is bad for you? :)

DAY 15


 My husband picked me up for lunch. We sat in his truck as he ate his lunch, and I mine. This filling rice, beans and potato dish was great. I ate half and saved the other have for snack. Costs .25 cents. 

Dinner: One of my favorites again. Stir fry noodles with potato, cabbage, and carrots. Costs .25 cents.

When having lunch with my husband, we dine out $10. My husband made dinner for the family this night $4. I late night snack of popcorn with truffle oil and drizzled asiago and parm would have been great too $3. Add my daily .55 coffee and today's total is $17.55. New donation total: $295.75

DAY 16

After dinner last night, here's a picture of what I have left for the remainder of the challenge.

Breakfast: This has been my quick breakfast most days.


Lunch: Rice, beans and potatoes it is again. This is a simple put together the prepped foods and out the door. Costs .25 cents

Dinner: Not a big soup eater, but this was not bad. Elbow soup with cabbage, carrots, beans and egg. Costs .30 cents



My usual Barnaby's lunch would have happened today with my friend $16.45. Starbucks Venti Americano on my drive home from work $4.75.  Dinner at home $3. Add my .55 daily coffee and today's total would have been: $24.75. New donation total: $320.50
